Job Description



We are seeking a talented and innovative Pastry Sous Chef to join our culinary team in San Diego, United States. As a key member of our pastry department, you will work closely with the Executive Pastry Chef to create exceptional desserts, pastries, and bread products that delight our guests and uphold our reputation for culinary excellence.

  • Assist the Executive Pastry Chef in overseeing daily operations of the pastry kitchen, ensuring high standards of quality and efficiency
  • Lead and mentor a team of pastry cooks, fostering a collaborative and innovative work environment
  • Develop and execute new dessert, pastry, and bread recipes, staying current with industry trends
  • Ensure all pastry items are prepared according to established recipes and standards, conducting regular quality checks
  • Manage inventory, control costs, and minimize waste while maintaining product quality
  • Coordinate pastry production for both restaurant service and banquet functions
  • Implement and maintain food safety and hygiene standards, including EcoSure and ServeSafe guidelines
  • Conduct daily shift briefings and provide ongoing training to pastry team members
  • Collaborate with other departments to ensure seamless service and guest satisfaction
  • Actively participate in menu planning and development, offering creative input and solutions

Qualifications

  • Culinary degree or equivalent pastry training from a recognized institution
  • Minimum 3 years of leadership experience in a luxury, high-volume hotel or similar establishment
  • Proven experience in pastry production and management
  • Strong knowledge of sugar work and chocolate skills
  • Expertise in creating and executing a wide range of pastry items, from classic to contemporary
  • Proficiency in Microsoft Windows applications and culinary management software
  • Excellent interpersonal and problem-solving abilities
  • Demonstrated ability to work well under pressure in a fast-paced environment
  • Strong team leadership and mentoring skills
  • Keen attention to detail and commitment to quality
  • Creativity and innovation in developing new dessert, pastry, and bread products
  • In-depth knowledge of food safety and hygiene standards, including EcoSure and ServeSafe
  • Ability to lift and carry up to 50 lbs and stand for extended periods
  • Flexibility to work various shifts, including weekends and holidays
